NOTE TO SELF: make this & dont share it with the kidz!!
Cook a small head of cauliflower. Drain & place in a food processor for 2-3 minutes. Add 1 cup plain Greek yogurt pulse until blended. Turn into bowl and stir in 2 teaspoons garlic, 1 teaspoon tarragon leaves or oregano or spice of your choosing and fresh ground black pepper. Chill. Serve with crackers.
Add 1 cup Parmesan cheese, bake at 400* for 20 minutes. Serve hot.
I like to use on sandwiches with sweet and spicy pickles and any kind of meat.
